Caulflower - cut 2 ends off.
Break up the ends into small pieces and steam until soft
Take the remaining middle piece, slice in half to leave you with 2 "Cauli Steaks"
Lightly coat the Cauli Steaks with avocado oil
Bake for 10-15m on one side, flip over and bake until edges are browning
dice up fennel bulb and put on baking sheet with steaks
Once steamed cauliflower is soft, add to blender
Remove fennel from oven, add to blender
add 1 cup of plant based milk to blender
salt and pepper, then blend until mashed potato consistency
Boil 1 cup of farro until desired firmness is good
drain water, throw your leafy green in to the pot
add balsamic vinegar, salt, pepper
mix and cover until ready to plate.
Total Cost = under $4 per full plate of food like in picture. (ours came out to $3.23). This one is so diverse because you can flavor the cauli steak in so many different ways to hit the cravings you want. for this cost, and this nutritional explosion on your plate, can't beat it.
