Mushroom Lentil Bolagnese

Yields4 Servings

 3 cups chopped raw mushrooms
 0.50 cup dry lentils
 4 cloves of garlic, minced
 2 medium carrots, finely diced
 2 medium celery stalks, finely diced
 1 medium yellow onion, diced
 24 oz low sodium tomoto sauce
 1 tsp paprika
 1 tsp nutmeg
 12 oz of your favorite whole wheat, chickpea, brown rice pasta (basically no processed white flour pasta)
 1 cup vegetable broth

add the carrots, celery, mushrooms and garlic already chopped up into a large pan. add some veggie brought to sautee on high heat.

keep adding veggie broth as needed (mushrooms will release a lot of water as well)

cook down for 10 minutes.

add tomato sauce and lentils. bring to a brief boil and then lower to a simmer, cover and cook for 10-12 minutes stirring frequently.

add pasta to boiling water and cook 10-12 minutes or cooked until preferred softness

Total Cost for 4 servings = under $10 (ours came out to $9.15). That's $2.28 per hearty plate of ridiculously healthy pasta!
