1 large baked potato (we got sweet potato because they were on sale.....score!). wrap it in tin foil and bake at 350 degrees.
grab sheet of tin foil and lay it out. rummage through your fridge and pantry and grab a handful of any veggies you have. dice them up and toss onto tin foil in a pile. I sprinkled on turmeric, salt, pepper, garlic powder, onion powder, parsley and oregano....no rhyme or reason, just grabbin spices.
fold up the veggies and twist edges to make sure it doesn't leak, and toss in oven with potato.
bake until potato is just a little soft to the touch.
take out, slice potato down the middle. unwrap the veggies and dump on top of potato. make sure to get all those juices on there too! (I should've mixed in some black beans in here to boost the protein content....next time)
obviously, we topped with some hot sauce as well
this is the definition of a nutrient bomb. 285 healthy calories, and I couldn't even finish it.
